Granny Ronan’s Bailey’s

This is a popular favourite at Christmas. I have developed Dairy Free and alcohol Free versions as well, which go down well for those of us on the food without the fun diets. Easy to make and much nicer than the shop bought stuff. Cheaper too!

Original

Ingredients

1 can condensed milk

Half pint whipped cream

1 glass whiskey

3 eggs

3 tablespoons coffee

75g milk chocolate

Method

Whip cream and milk.

Add beaten egg, coffee and melted chocolate.

Keep refrigerated and shake well before serving.

Will keep for about 3 weeks in the fridge.

Makes about 1.5 litres

Tip: To make it chocolate orange, try adding some orange essential water.

Essential Oils & Waters

Dairy Free

Ingredients

2 cans coconut milk (not slimming type!)

1 tablespoon maple syrup

1 glass whiskey

3 eggs

3 tablespoons coffee

75g dark chocolate

Method

Whip coconut milk and maple syrup.

Add beaten egg, coffee and melted chocolate.

Keep refrigerated and shake well before serving.

Will keep for about 3 weeks in the fridge.

Makes about 1.5 litres

Tip: Why not make it minty? Use either pepper or spearmint essential oil (just a few drops) or a little more of the essential water.

Alcohol Free

Simply follow either recipe and leave out the whiskey!
